Grilled Cheese Tuna Salad Sandwich
This recipe is amazing! I have always been a huge fan of tuna salad, but making a grilled cheese and tuna salad together? Now that equals perfection! This recipe has amazing textures and flavors and is me and my toddlers favorite lunch item still today.
Now to make this perfect grilled cheese you got to make sure to set it on low heat; low heat will give you that perfect, brown and crispy bread as well as melting all the cheese and making the tuna salad warm inside! Now I know some of you are thinking "making a grilled cheese is so easy" but I am gonna tell you your wrong I know so many people and restaurants that have made horrible grilled cheeses, my fiancé being one of them. He makes an extremely gooey grilled cheese where the bread isn't even crisp and falls apart in sadness when you pick it up! This happens because of too much butter and not getting the pan warmed up before you put the grilled cheese onto the skillet. I have also witnessed people that burn the hell out of their grilled cheeses and the cheese isn't even melted inside, which stems from too high of a heat. You just got to make sure you have your pan heated up on a low to medium setting and you don't over do it when you butter your bread.
~ Grilled Cheese Tuna Salad Sandwich ~
Yields: 3 - 4 Sandwiches

Ingredients:
Tuna Salad
- One 12oz can tuna drained
- 1/4 Cup Mayo (more if you want a creamy texture)
- 1 teasp. lemon juice
- 1/4 Cup red onion diced
- 1/4 Cup celery chopped
- 1/2 teasp. dried basil
- 1/2 teasp. dried parsley
- 1/2 Tablespoon red wine vinegar
- Pinch of salt & pepper
Sandwich
- Butter
- Whole wheat bread
- American cheese slices
- Spinach
- Pickles
Directions:
To make the tuna salad: In a large bowl break up the tuna with a fork and add in the mayo, lemon juice, red onions, celery, dried basil and parsley, red wine vinegar and a pinch of salt and pepper to taste.
Grab two pieces of bread and spread a small amount of butter on one side of each bread.
Add a tablespoon of butter to your pan and warm up on a low to medium heat.
Once butter has melted then add one slice of bread to the pan butter side down, then add your american cheese slice, tuna mixture, another slice of american cheese and bread butter side up together.
Cook until bread is a nice golden brown and then flip over. Roughly about 3 to 5 mins on each side.
Once your bread is nice and toasted on each side open up the sandwich to add on your spinach and pickles and enjoy!
