I recently came up with this sandwich for our cafe fall menu and it was by far everyones favorite sandwich! Its light, refreshing and full of so many flavors.

Ingredients:
- 4 sweet potatoes peeled and cut into 1/2 inch rounds
- 2 tablespoons coconut oil
- 8 slices sourdough bread
- 8 slices sharp cheddar cheese
- Balsamic glaze
- Mayo
- 1/4 red onion cut into slices
- Handful of arugula
Instructions:
- Set oven to 375 degrees.
- Take your peeled and cut sweet potatoes and place inside of a bowl and mix with coconut oil until all pieces are coated.
- Lay sweet potatoes one by one on a baking sheet and place in oven for about 20 mins turning sweet potatoes over half way through.
- Once sweet potatoes are cooked build your panini. Start with bread, mayo, cheese, 8 sweet potato slices, red onions and balsamic glaze.
- Place sandwich onto panini press for about 5 mins or until cheese is melted.
- Once cheese is melted open up sandwich and add in the arugula and serve!
You can make the sweet potatoes ahead of time and refrigerate for up to a week or freeze for up to 2 months!
