Salmon with Mango Salsa & Couscous
This salmon recipe is one of my favorite things to do when cooking salmon for my family. It's topped with a homemade mango salsa and is excellent to prepare on those warm summer months. The mango salsa has a delectable combination of juicy sweetness, spicy undertones, fresh herbs and a splash of citrus tartness that mixes well with the rich taste of salmon that is rubbed in pepper, salt, lemon and lime juices.
In our home, we never eat enough fish, and I can truly say its because fish is just so damn expensive and everywhere I read nowadays suggests that you shouldn’t be eating a lot of fish because of the high mercury content and the plastic that's now inside of fish. I probably shouldn’t be telling you this shit while I’m trying to hand over this salmon recipe to you all! 🤭 Oops sorry. But just so you know salmon is one of those fishies that are low in mercury content compared to other types like King Mackerel, Ahi Tuna, Bluefish, and Grouper. If you are gonna cook fish the best ones to reach for are Salmon, Trout, and Pollock to just name a few.
Now my toddler is not a big fan of the fishy taste so I could not get her on board with this recipe, unfortunately. I hope you have better luck with your kiddos. But it did leave plenty over for me and my fiancé to eat and we devoured this recipe. I couldn’t believe that my fiancé actually ate this salsa! He hates any kind of peppers. But I knew once I started cooking a ton more with fresh ingredients he would have to ultimately give in and then maybe one day he will start to enjoy them and so far I gotta say its looking pretty good and my plan is working. Ha!
~ Salmon with Mango Salsa & Couscous ~
Yields: 4 Salmon Fillets
Prep: 20 Mins
Cook: 15-20 Mins
Ingredients:
Lime Salmon
- 4 6oz salmon fillets
- 3 Tbsp. olive oil
- 2 tsp. fresh lime zest
- 3 Tbsp. fresh lemon juice
- 3 cloves crushed garlic
- salt & pepper to taste
Mango Salsa
- 1 large mango peeled & diced
- 1 cup chopped red bell pepper
- 1/4 cup chopped fresh cilantro
- 1/3 cup chopped red onion
- 1 large avocado peeled & diced
- 1 Tbsp. fresh lime juice
- 1 Tbsp. olive oil
- Salt & Pepper
Couscous
- 2 cups chicken broth
- 1 Tbsp. butter
- 1 10oz package plain couscous
- 1/3 cup grated parmesan cheese
- 1 Tbsp. Fresh lemon juice
- 1 Tbsp. olive oil
- 1/4 tsp. salt
- pepper to taste
Instructions:
1.) In a large baking dish whisk together the olive oil, lime zest, lemon juice, crushed garlic, and salt & pepper. Add in your salmon fillets, cover and allow to marinate in the fridge for up to 20 mins.
2.) Flip salmon and allow to marinate on the other side for another 20 mins.

3.) While salmon is marinating start making the mango salsa so it's in the fridge premade and ready.
4.) Add mango, red bell pepper, cilantro, red onion, avocado, lime juice, olive oil, and salt and pepper into a medium-size bowl. Mix ingredients all together till everything is nicely blended together. Wrap and place into the fridge until the salmon and couscous are cooked.
5.) Preheat a pan on the stove to medium-high heat and add in the salmon.
6.) Cook for about 5 mins on each side or until it is cooked through all the way.
7.) While salmon is cooking start making your couscous.
8.) In a saucepan on high heat add in the broth and butter and bring to a boil.
9.) Stir in package of couscous, cover and remove from heat. Let stand for 5 mins and then fluff with a fork.
10.) Add in parmesan cheese, lemon juice, olive oil, salt and pepper, and fluff with a fork once again.
11.) Once salmon is done cooking the couscous and salmon to a plate and top with the mango salsa
