Banana Chocolate Chip & Coconut Pancakes
As a child, I used to cherish the moments when my mother made chocolate chip pancakes on Sunday mornings for the family. I recall being dumbstruck that my mom was allowing me to have chocolate chips included in my breakfast! I was craving these one morning and wanted to recreate these pancakes for my kid but quickly I learned that she won’t eat any of the damn chocolate chips, It's kind of a miracle she isn’t a fan of chocolate for I will not fret, at least I do not have my one and a half-year-old jumping off the walls for me at 8:00 am.
I guess it's safe to assume that this recipe is a way for me to relive my childhood memories and an excuse to include chocolate into these pancakes, for let me tell you I’m a sucker for chocolate. One of the things I did tweak in this recipe is by adding bananas to it for my mother did not add in bananas to her pancakes when I was growing up, so this was something different I tested out and they ended up coming out moist and decadent. Sadly, for now, I won't include the chocolate chips to the batter anymore, and instead, I will just top them off with chocolate chips. The sacrifices we have to make as parents to make our children happy! And you think it would have been the contrary, my daughter wanting the chocolate chips and mom not, haha! I am sure after a couple more years she will end up loving the chocolate added in and it will be one of those memories I can create for my daughter as my mother once did for me.
~Banana Chocolate Chip & Coconut Pancakes~
Yields: 8 Pancakes
Prep Time: 10 Mins
Cook Time: 15 Mins
Pancake Ingredients:
- 11/2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1 1/4 cups milk
- 1/2 cup mashed banana
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips divided (optional)
Toppings:
- Banana
- Coconut Flakes
- Chocolate Chips
- Maple Syrup
1.) Heat up a non-stick frying pan (one that is about the size you want your pancakes to be) and spry onto the pan.
2.) In a medium-size bowl combine together dry ingredients; flour, baking powder, cinnamon, and sugar.
3.) In a separate bowl whisk together wet ingredients; eggs, banana, vanilla, and milk.
4.) Fold in 1/4 cup of chocolate chips (optional)
5.) Add the wet ingredients into your dry and whisk together till completely incorporated.
6.) Using a large scoop, drop the dispersed amount of batter onto your heated up pan.
7.) When the edges begin to set and a bunch of tiny bubbles start to create on the top of the pancake it is time to flip it over. Cook about 1 to 2 mins on each side. The center should be firm and not squishy.
8.) Once pancakes are done cut up your bananas and add to the top of your pancakes along with coconut, chocolate chips, and maple syrup.
