Vegetarian Chickpea Sandwich
I love this recipe so much! I actively try to eat this once or twice a week because it’s that wonderful, and an extra benefit is that it's healthy for you too. I came up with this recipe one day when I was searching for a means to hide veggies into a meal for my toddler; which I’m sure you are noticing is developing into a popular trend on this blog. She goes through these chapters where one week she loves vegetables and the latter week she will reject them all, and I was having that refusal week from her.
So I started to experiment with the few ingredients I had in my kitchen (it was that time of the month to go grocery shopping) and throw what shit I had leftover in the fridge together. I will not lie, I was frightened about how this was going to taste once I started preparing it, but low and behold it was fucking delicious! Even my little one admired it too, but then again one day she will go for something I make and then another time she won’t eat it. Toddler's eating patterns are the worst.
This recipe puts any chicken or tuna salad to shame; it's so savory and delectable. Sometimes I won't even include this into a sandwich and will just use it as a topping to a bed full of spinach or other leafy greens or I will just eat it straight out of a dish with some whole-wheat crackers. But this recipe is surely the best inside of two pieces of bread along with some spinach, cucumbers, tomatoes, onions, banana peppers & cheese. You can include whatever your little heart desires. I have even made it into a grilled cheese & panini too, which only adds to the flavor. Have you ever made noises while you eat something because it's that freaking good? I'm sure you would know the sound if you heard it; It's the one sound children will make when they are eating something they love, mmmmhhhhh mmmmhhhh ! 😋 Well, that's precisely what this recipe will make you do too!
~Vegetarian Chickpea Salad Sandwich~

Yields: 3-4 Sandwiches
Prep: 15-20 Mins
Ingredients:
Chickpea Spread:
- 1 can garbanzo beans (drained & rinsed)
- 2 medium carrots (peeled & diced)
- 1/4 cup green & red peppers diced
- 1 stalk celery diced
- 1/4 cup regular hummus
- 1/2 tsp. salt & pepper
- 1/2 tsp. dried parsley
- 1/4 tsp. dried basil
- 1/4 tsp. paprika
Sandwich Toppings:
- Lettuce or Spinach
- Tomato
- Red Onion
- Cucumber
- Cheese Slices
- Bread
Instructions:
1.) Drain and rinse your chickpeas then add to a bowl and smash with a fork or potato masher (smash half the chickpeas and leave the other half whole)
2.) Peal and dice your carrots and add to mashed chickpea bowl.
3.) Dice your peppers and celery and add to bowl and mix.
4.) Add hummus to the bowl and mix together. (If it looks to dry add in about 1 tablespoon extra of hummus at a time)
5.) Add salt, pepper, parsley, basil and paprika and mix together till all ingredients are well incorporated.
6.) Then add to your bread of choice and your desired toppings
This recipe will be good for up to 1 week in the fridge.
