Freezer Friendly Veggie Quesadillas

I love any kind of Mexican food and when I was pregnant with my little one that is literally all I craved; tacos, quesadillas, tortas, nachos, tamales, burritos, rice and beans, you get the picture. I demanded it spicy and cheesy and even today I am regularly craving everything Mexican cuisine. That's why I constantly have these quesadillas conveniently in my freezer at all times, for if I do not have these puppies handy, you will end up capturing me cruising through Taco Bell instead. Yikes! I know quesadillas are super simple to make so I’m certain you're wondering why I need to have them available and ready in the freezer? Well, if any of you are parents or just a busy individual, then I am certain you realize why it's nice to have things pre-made for you that aren’t freezer meals from the grocery store. 😝 Yuck!

These quesadillas are packed with protein and fiber for a filling and healthy meal that the entire household will enjoy. It’s got black beans, corn, tomatoes, cheese, onions, lime juice, and taco seasoning to make your taste buds go crazy! As long as you choose the correct fillings and maintain the cheese to a minimum, these quesadillas are a remarkably healthy choice for your snack or meal. Another factor to consider when seeking to create the healthiest quesadilla possible is your tortilla. Try to avoid the plain traditional flour tortillas since they bring little to the table nutritionally and they are higher in calories. 


How To Freeze:
Follow the directions on the recipe below making certain to cook the quesadillas before you freeze. 
Allow the quesadillas to chill before freezing. If you don’t follow this step, they will become freezer burnt. 
Stack each of the quesadillas between a single layer of parchment paper so they don’t stick together once they freeze. 
Get a ziplock freezer bag and write on it the item, date prepared, and how to reheat.
Place quesadillas inside of the bag and into your freezer. 
These are good for up to 2 months in the freezer. 

How to Reheat:
There are 2 different ways you can reheat these up to taste as great as when you first made them!
The first is in the microwave. Wet a paper towel and wrap it around a quesadilla. Place quesadilla and paper towel in the microwave and set on high for 1 min, then flip and set on high for 1 more minute.
The second option is on the stovetop. Heat up a frying pan and once frying pan is warmed up place quesadilla in the pan. Allow to cook for 2 mins on each side or until your cheese and toppings in the middle are warmed up. 


~ Veggie Quesadillas ~



Yields: 10 Quesadillas 
Prep: 8 Mins
Cook: 15 mins 
Ingredients: 

Filling:
  • 1 15oz can black beans drained & rinsed 
  • 1 15oz can sweet corn drained & rinsed 
  • 1/2 small red onion chopped
  • 1 cup cherry tomatoes cut in half 
  • 1 clove garlic 
  • 2 cups shredded cheddar cheese
  • 1 package taco seasoning 
  • 1 juice of a lime 
  • 10 burrito sized tortillas
Toppings:
  • Cilantro
  • Sour cream
  • Avocados
  • Pico de gallo 
Instructions: 
1.) Drain the cans of black beans and corn and rinse lightly.
2.) Place beans and corn into a large bowl.
3.) Chop the red onion and mince the garlic clove. Place into a heated pan on medium low heat and cook until translucent, about 3 mins. 
4.) Add the cooked onion and garlic to the bean and corn bowl and mix well together. 
5.) Cut the cherry tomatoes in half and add to bowl. 
6.) Add in your shredded cheddar cheese, taco seasoning and juice of a lime to the bowl and mix everything together until evenly mixed. 
7.) Place about half a cup of filling to one side of the tortilla shell and fold over. 
8.) Heat up a skillet on medium low heat and spray with vegetable oil. Once skillet is warmed up add your quesadilla to the pan.
9.) Cook on both sides until both sides are brown and crispy and the cheese inside is melted. 
10.) Cut with a knife or pizza cutter and add desired toppings suggested above.

To Freeze:
Cook each quesadilla as follows above. 
Once all quesadillas are cooked allow them to cool to room temp. 
Wrap each individual quesadilla in parchment paper.
Write on a freezer ziplock bag the item, date made and how to reheat.
Place quesadillas inside bag and place in freezer. 
These are good for up to 2 months in the freezer.

To Reheat: 
Wrap quesadilla in a moist paper towel and put in microwave on high for about 1 minute. Flip and set to 1 minute again until filling in the middle is warmed up.
Or warm up pan on stovetop to medium low heat. Once pan is warmed up add quesadillas and cook for about 2 mins on each side or until filling in the center is warm.
