Skillet Rice, Meatballs & Peas

I found this amazing 30 minute recipe on the food charlatan and my daughter loved it! Im slowly finding out that my child is into simple recipes with not to much of anything; Casseroles with too many ingredients, tacos, or a recipe with to many spices are all a no go for her. This recipe was just the kind of thing I knew my kid would love and I had all the ingredients already on hand.

Serves: 5-6 
Cook Time: 30 minutes 

Ingredients : 
  • 2 teaspoons olive oil
  • 3 cloves garlic minced 
  • 1 pound store bought frozen meatballs 
  • 3 cups beef broth 
  • 1 1/2 cups uncooked rinsed white rice 
  • 1/2 teaspoon garlic powder 
  • 1/2 tablespoon parsley
  • 1/4 teaspoon black pepper 
  • 1/2 teaspoon salt 
  • 1 cup frozen peas 
Instructions: 

1. Place meatballs in the microwave for just 2 minutes to help unthaw them.

2. Heat a skillet over medium high heat and add in the oil. 

3. Once oil is heated up add in garlic and sauté for 1 minute. 

4. Add the meatballs and cook for 2 to 3 minutes. 

5. Add in your rice, broth, garlic, parsley, black pepper and salt and scrape any brown bits off the bottom.  

6. Stir and bring the heat up too high so it comes to a boil. 

7. Reduce the heat too low to maintain a simmer and cover with a lid. 

8. Continue to simmer with a lid for 15 to 20 minutes until the rice is tender and the liquid is absorbed. Stir at 10 minutes to make sure rice is not sticking. 

9. When the rice is cooked add in the frozen peas and cook for another 2 minutes.
