Curry Egg Salad Wrap
I came up with this recipe recently when I was looking for something to do with Nummy Nibbles Indian Cooking Sauce I had purchased from my work. I have seen a lot of recipes out there already for curried egg salad and knew this would work perfectly with this sauce! It's seriously one of the easiest recipes ever to make. It only requires 8 simple ingredients including mayo, hard-boiled eggs, red onions, cashew pieces, kolhapuri sauce, arugula, tortilla wrap and craisins.
You won't be needing all this Indian cooking sauce either so you can end up using some of it for another recipe! There are tons and tons of ideas you can do with the leftover sauce on their website here.

Prep Time: 10 mins
Ingredients:
- 12 hard-boiled eggs diced
- 1/2 red onion diced
- 1/4 cup cashew pieces
- 1 1/4 cup mayo
- 4 tablespoons kolhapuri sauce
- 2 tablespoons craisins
- handful arugula
- Tortillas
Instructions:
- Mix together hard-boiled eggs, onions, cashews, mayo and kolhapuri sauce in a mixing bowl
- Take a couple of spoon fulls of the curry egg salad and lay onto your tortilla and top with craisins and arugula
- Roll up the tortilla and serve!
