Parmesan Herb & Black Pepper Crusted Pork Loin
This simple recipe will be sure to impress all your guests and make you look like a true chef. Its super simple and pretty much fool proof, all you need to do is mix your herbs and seasonings, smear it on the pork, cut up some veggies and throw into the oven! It's truly that simple.
I made this for our family Christmas party and my family devoured it! Im gonna be honest I had never cooked a pork loin before this recipe and I was so impressed with the way it turned out, I felt like a master chef.

Ingredients:
Pork Loin
- 4lb pork loin
- 2 teaspoons olive oil
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh rosemary
- 2 tablespoons chopped fresh sage
- 2 tablespoons chopped fresh thyme
- 2 tablespoons salt
- 1 cup grated parmesan cheese
- 2 tablespoons black pepper
- 1 teaspoon red pepper flakes
Oven Roasted Veggies
- 4 tablespoons olive oil
- Salt
- Black pepper
- 1 red onion peeled and quartered
- 3 cups brussel sprouts halved
- 1 cup carrots peeled and cut into strips
- 1 parsnip peeled and cut into rounds
Instructions:
- Preheat oven to 425 degrees
- In a medium size bowl combine olive oil, parsley, rosemary, sage, thyme, salt, pepper, parmesan, red pepper flakes.
- Trim the pork loin of any excess fat and place into a shallow roasting pan.
- Rub pork loin with extra olive oil and spice mixture coating it evenly.
- Roast until pork loin has an internal temperature of 140 degrees for about 35 to 45 minutes.
- Remove from oven and allow to chill before slicing into.
- After pork loin is cooked keep the oven on at 425 degrees.
- In a large bowl combine onion, Brussel sprouts, carrots, parsnips, salt, pepper and olive oil and mix together.
- Place veggies on a baking sheet and bake for about 20 to 25 minutes or until veggies are tender.
- Stir halfway through with tongs.
- Arrange veggies and pork loin on a platter and serve!
