Peruvian Aji Verde Chicken Panini
This sandwich is extremely fresh and filled with so much flavor from the aji verde sauce, chicken, avocados, red onions arugula and melty pepper jack cheese!

Ingredients:
Aji Verde Sauce
- 1 bunch fresh cilantro
- 15 fresh mint leaves
- 2 cloves garlic
- 1 jalapeno pepper seeded
- 1/2 cup mayo
- 1/4 cup grated cotija cheese
- 1/4 cup water
- 2 tablespoons aji amarillo paste
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
Panini:
- 8 slices 7 grain wheat bread
- 8 slices pepper jack cheese
- 4 small pre-cooked chicken breasts
- 1/2 cup red onion slices
- 2 avocados
- Aji Verde sauce
- 4ozs arugula
Instructions:
- Break off the bottom half of the cilantro steams and discard. Place cilantro, mint, garlic, jalapeño, mayo, cheese, water, paste, lime juice and salt into a food processor
- Puree until the mixture is smooth about a minute or two. Cool and refrigerate until ready to use.
- Warm up your panini press. lay out 2 slices of bread then top with Aji Verde sauce, pepper jack cheese, 1 pre-cooked chicken breast, a couple slices of red onions and 1/4 avocado. Put sandwich together and place on panini press for about 5 mins.
- Once cheese is melted pull sandwich out and reopen the sandwich to top with more Aji Verde sauce and arugula
