Ginger Cashew Chicken Salad
This salad is so refreshing and has a ton of texture and flavors to it that explode in your mouth. Its got crunch, sweet and tangy flavors and is remarkably healthy for you.

Ingredients:
- 3 chicken breasts pre-cooked and diced
- 16 ozs spring mix
- 1-2 cups shredded red cabbage
- 1 cup shredded carrots
- 1 can mandarin oranges
- 1 cup chow mien noodles
- 1 cup chopped cashews
- 2 cups sugar snap peas
- 1 cup diced red onion
- Asian sesame dressing
Instructions:
- Place spring mix on a serving platter and arrange with cabbage, carrots, chicken breast, cashews, mandarin oranges, onions, snap peas and chow mien noodles
- Drizzle asian sesame dressing over top and serve
