Ginger Cashew Chicken Salad

This salad is so refreshing and has a ton of texture and flavors to it that explode in your mouth. Its got crunch, sweet and tangy flavors and is remarkably healthy for you.

Serves: 3-4
Prep Time: 10 mins

Ingredients: 
  • 3 chicken breasts pre-cooked and diced
  • 16 ozs spring mix 
  • 1-2 cups shredded red cabbage 
  • 1 cup shredded carrots 
  • 1 can mandarin oranges 
  • 1 cup chow mien noodles 
  • 1 cup chopped cashews 
  • 2 cups sugar snap peas 
  • 1 cup diced red onion 
  • Asian sesame dressing 
Instructions: 
  1. Place spring mix on a serving platter and arrange with cabbage, carrots, chicken breast, cashews, mandarin oranges, onions, snap peas and chow mien noodles
  2. Drizzle asian sesame dressing over top and serve
